RSL Foundation Partakes in Foodstruction 2018 to Benefit the Utah Food Bank

On Friday morning, members of the RSL Foundation gathered at the Herriman City Library to construct a bust of Real Salt Lake mascot Leo the Lion for Foodstruction 2018 that will directly benefit the Utah Food Bank.


“One of the goals of the RSL Foundation is promote a healthy lifestyle,” Director of Community Relations Kyle Schroeder said. “Being a part of this program, we are able to donate food to the Utah Food Bank at a time where they don’t receive many donations and promote reading throughout the community by partnering with the Herriman Library."

Using the design “Leo’s Favorite Things”, the RSL Foundation team of Kyle and Whitney Schroeder, Mary Van Minde and Natalia Marshall-Hewitt together with help from RSL Season ticket member Jessica Rice, erected a nearly seven-foot tall sculpture of Leo’s head. Using various unopened food items, the group had a four-hour window to fully complete the task to be displayed from July 27th to August 9th inside the library. Using the items listed below, the group was able to complete the task, much to the awe of patrons inside the library:


  • 750 40oz jars of peanut butter
  • 140 22.58oz jars of Sun-Maid Raisins
  • 130 Packs of Idaho Spuds Mashed Potatoes
  • 128 Boxes of Kraft Mac and Cheese
  • 100 Packages of Ramen
  • 70 Boxes of Jumbo Pasta Shells
  • 16 Packages of Oyster Crackers
  • 16 Bags of Potato Chips
  • 8 Bags of coffee
  • 8 Boxes of Lucky Charms


All of the food used in the sculpture will be donated to the Utah Food Bank. Totaling nearly $5,000.

“Typically people think of donating items during the holidays because it’s a time of giving,” Rice explained. “But during the summer months is when the Utah Food Bank needs donations the most. It was really exciting to be able to help in such a fun way like this.”


Fans can vote for their favorite Foodstruction sculpture by liking the Salt Lake County Health Department’s Facebook page, finding the pinned post on the Facebook page with the ‘Vote Now’ graphic before selecting their two favorite food sculptures.
